When time and money are tight, it can be hard for families to create meals that satisfy. This is one of my favorite recipes for changing the same old sandwiches into Hot Beef, Hot Ham, or Hot Turkey Sandwiches. It is excellent for using up the bread and lunch meat in the drawer as well. These meals are not particularly healthy, but they are a warm and tasty meal of “comfort food,” which satisfies families and singles alike, on a very limited budget. These meals are good choices to fill out your meal plan on a small budget.

Instructions

Things You'll Need:

  • Sliced white sandwich bread (may be substituted for your favorite bread)
  • Sliced deli meats or cold cuts, such as smoked ham, turkey breast, or sliced beef.
  • Any instant potatoes
  • Any instant gravy
  1. Step 1

    Make the instant potatoes according to the box instructions. You can usually do this in the microwave if you are not heating up the stove tonight, or for apartment and dorm dwellers.

  2. Step 2

    Make the gravy. For a single person, a coffee cup can be used to make gravy in the microwave as well.

  3. Step 3

    Now assemble your hot sandwich. Plain white bread is the classic bottom layer. On top of this, put a couple of scoops of mashed potatoes. Now lay a few slices of ham, turkey or roast beef on top of the mashed potatoes. Pour the gravy over the top. Serve to your happy family, and tell them you got the recipe when you were young and you worked in a truck stop. They will be happy to have a special hot meal instead of a sandwich.

Tips & Warnings
  • Keeping some mashed potato flakes on hand is a great way to stretch your budget. They are almost cheaper than real potatoes, when you consider the cost to cook, carry, and refrigerate. Doing it all in the microwave keeps costs down.
  • Nice deli cold cuts and homemade bread could make this recipe gourmet!! Or it is also good with the almost stale end pieces of the cheapest white loaf. Gravy makes everything good and fresh again.
