Want an easy dish to use up some of that garden produce? We all know how it is when the kitchen garden starts pumping out vegetables. We want to use them up before they go to waste, but there’s only so many ways we can eat zucchini. Well, Zucchini Strata is super simple, so healthy, and simply delicious, and it is a great way to use some of the most common vegetables that might go to waste.

Instructions

Things You'll Need:

  • 3 medium Zucchini
  • 2 medium tomatoes
  • 1 medium onion
  • Stick of butter
  • 1/2 tsp of dried parsley or 1 teaspoon of fresh
  • 1 Tb minced garlic
  • Parmesan cheese
  • 1.5 quart baking dish or so
  • Cooking spray such as Pam
  • Aluminum foil or baking dish lid
  1. Step 1
    Set the oven to 350 degrees

    Move the cooking rack to a middle position and preheat the oven at 350 degrees.

    Cut up the vegetables. Slice all three zucchini into 1/4 inch thick circles, cube the tomatoes, and dice the onion.

    Lightly spray the baking dish with the cooking spray and start layering the zucchini in it. Cover the entire bottom of the dish with overlapping slices of zucchini.

    Sprinkle a bit of tomato and some onion over top of the zucchini. Then add a dash of parsley, a bit of garlic, and some parmesan cheese.

    Dot the top of that layer with globs of butter.

    Add another layer of zucchini, tomatoes, and onions. Then top that with some parsley, garlic, and parmesan cheese. Dot that layer with butter.

    Keep adding layers until you reach the top of the baking dish or run out of ingredients. This may be only two layers or may be quite a few depending upon how many veggies you have and how big the baking dish is.

    Add a good amount of parmesan cheese to the top of the strata. Cover with the lid of the baking dish, or if you don’t have that, a top of aluminum foil.

    Set the dish inside the preheated oven and allow to cook for 30 minutes, or until the zucchini is cooked through.

    Remove the cover from the dish and allow it to cook for another 5 minutes until the top turns browns just a little bit.

    Remove from heat and serve. This zucchini strata is very nice with a side salad, some homemade bread, and a big, cold glass of ice tea. Or you can allow it to cool off since this recipe tastes great warm or cold.

Tips & Warnings
  • This is a great way to use up some of your garden produce.
  • This is great on a hot day since you can eat it after it cools off.
  • If you have a solar oven, this is a great recipe to make in it. You'll save energy and not have to heat up your house with cooking.
