Chicken curry is a common delicacy in South Asia (specifically India), East Asia, as well as in the UK and Caribbean. A typical curry consists of chicken in an onion and tomato-based sauce, flavoured with ginger, garlic, chillies and a variety of spices, often including cumin, cinnamon, cardamom, and so on (depending on cookery style). Chicken curry is sometimes made with a pre-made spice mixture known as curry powder.

Instructions

Things You'll Need:

  • 1 lb. boneless skinless chicken breast
  • 2 lb. onions
  • 1 lb. tomatoes
  • 1 sq. inch ginger
  • 4 cloves garlic
  • 2 tsp. turmeric powder
  • 2 tsp. coriander
  • 2 tsp. cumin seeds
  • 1 tsp. crushed red pepper (more or less to taste)
  • Salt to taste
  • 4 tsp. cooking oil
  1. Step 1

    Heat the pan, add 4 tsp of cooking oil. Sauté finely diced onions, ginger and garlic on high heat, stirring constantly until light brown.

  2. Step 2

    Reduce heat to low, add turmeric powder, coriander powder, cumin seeds, red peppers and finely diced tomatoes. Stir well, cook for 5-10 minutes.

  3. Step 3

    Add chicken and salt to taste. Cook 30-45 minutes on low/medium heat, stirring periodically.
