Things You'll Need:
- 1 store bought or leftover chicken made at home.
- 1 Bread for pizza base - you can substitute Boboli pizza shells
- 1 jar Bertolli Alfredo Sauce
- Green peppers (optional)
- Mushrooms - Shitake or portabella baby mushrooms are great
- optional 1 onion sliced or diced small and caramelized in separate pan
- 2 cups of Pizza Cheese or fine shredded cheddar cheese. A smoky cheese goes well with BBQ.

Step 1
Set oven to 375. You can vary the bread and toppings to your tastes. I use Rosemary Foccacia Bread cut into fourths for Mediterranean chicken toppings. For BBQ chicken I use French Bread Rolls split in half lengthwise. Use your imagination!
Place split bread bases on Pizza Pan or cookie sheet. (pizza pan preferred) -
Step 2
Spread Alfredo sauce on each bread base or pizza shell. Make sure to spread evenly to the edges to avoid dry spots. Because bread absorbs the sauce, you can add a little more sauce than if you were spreading on pizza dough shell.

Step 3
Top pizzas with bits of Chicken, add desired vegetables and a sprinkle with 1-2 fistfuls of cheese. Many cooks put the cheese on just after the sauce. We prefer it on top of the chicken and vegetables.

Step 4
Place Pan with pizzas in oven for 10-15 minutes. It is simple to tell when its done as the cheese should be turning brown.

on 8/14/2009 I am realizing that I need to make pizza soon! Easy to follow recipe and I like the little tips about the sauce and bread types. Whenever we grill chicken breasts we always do a couple extra. We slice them and save for later use - now I have one more use : ). P.S. I like how you measure - "fistful" is definitely a form of measurement in our house too.
