How to Make Mexican Tostadas
Tostadas are flat tacos, or large individual nachos, that are easy to prepare and make a fun family dinner. Does this Spark an idea?
Things You'll Need
- Oil for frying
- 12 corn tortillas
- Salt to taste
- 2 15-oz. cans refried beans
- 1/2 head lettuce, chopped
- 2 avocados, diced
- 2 tomatoes, diced
- 1 medium onion, diced
- 1 bunch cilantro, chopped
- 8 oz. shredded cheddar cheese
- Salsa to taste
- Tongs
- Paper towels

Chop all of the vegetables and set them aside in individual bowls. You can dress them lightly with salt and oil if you like.

Heat the beans in a medium saucepan over medium-low heat; allow them to warm up while you prepare the tortillas.

Pour about 1/4 inch of oil into a small frying pan or skillet and heat it on medium-high until it shimmers.

Fry each tortilla until it begins to turn brown and becomes crispy, about 30 seconds per side. Use tongs to submerge the tortilla in the oil and flip it over. Set each tortilla aside to drain on a large paper towel-covered plate.

Serve the refried beans in a large bowl along with a plate of crispy tortillas, the bowls of individual vegetables and the salsa of your choice so that people can assemble their own tostadas as they wish.

Tips & Warnings
A high-smoke point oil, such as canola oil, is best for frying the tortillas.
