This Italian style potato salad is a nice change from traditional mustard-mayonnaise based American potato salad recipes. And it's another bacon recipe for bacon lovers. The bottled Italian dressing gives the potato salad a zesty flavor and the vegetables add texture, color and crunch. Five pounds of potatoes make approximately 10-12 servings of potato salad a good amount for a bbq, family reunion, potluck or Fourth of July celebration. Allow time for flavors to meld by making this easy potato salad recipe at least two hours before you plan on serving the salad. Put this potato salad recipe in your easy salad recipe file.

Instructions

Things You'll Need:

  • 5-pounds redskin potatoes
  • 1 cup chopped red onion
  • 1 cup chopped celery
  • 1/2 cup chopped fennel (optional)
  • 1/2 cup chopped sweet red pepper
  • 1/4 cup fresh chopped parsley
  • 1 can sliced black olives
  • 12 pieces well cooked bacon chopped fine
  • 1 bottle Newman's Own Family Recipe Italian salad dressing
  • 1 cup mayonnaise
  • Lawry's seasoning salt
  • fresh ground black pepper
  1. Step 1

    Cut the red potatoes into quarters and boil until cooked through. Don't overcook or potato salad will be mushy. Drain potatoes and let cool for approximately 20 minutes.

  2. Step 2

    When potatoes are still warm add well-shaken bottle of Newman's Own dressing or your own favorite vinaigrette. Season potatoes with salt and fresh ground pepper.

  3. Step 3

    Add all vegetables, olives and bacon pieces and mix gently. Fold in mayonnaise. Depending on how starchy your potatoes are you may need to add more mayonnaise. Chill the potato salad at least two hours.

Tips & Warnings
  • Adding the vinaigrette while potatoes are still warm ensures a more flavorful potato salad.
  • The fennel is optional but fresh fennel adds a crunchy element similar to celery with a sweet anise flavor.
  • Green olives stuffed with pimientos can be substituted for the black olives.
