Savory scones with a frothy cappachino

While sweet scones are a traditional breakfast or high tea pastry, savory scones can be used as a quick and easy dinner bread. You can also use these savory scones for a party, baby shower, or bridal shower stuffed with a variety of ingredients. Piping hot scones also taste great with a sweet or savory butter. Try my honey-nut butter or a fresh herb butter.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 2 cups AP flour
  • 1 tsp. salt
  • 1 Tablespoon baking powder
  • 1 cup plus 2 Tablespoons heavy cream
  1. Step 1

    Sift together dry ingredients.

  2. Step 2

Slowly add 1 cup of heavy cream, reserving the 2 tablespoons for the top of the scones, stirring with a wooden spoon until mixture forms a dough. Knead the dough gently about 20-30 seconds.

  3. Step 3

Pat or roll out the dough 3/8" thick on a floured board. For hors d'oeuvres sized scones cut dough with a small 1 3/4" cutter. Brush the tops of the scones with the reserved 2 tablespoons of heavy cream. Bake in a preheated 425 degree F. oven for approximately 15 minutes or until scones are brown. Let cool slightly but serve warm with whipped butter or your choice of fillings. Savory scones make a great hors d'oeuvre when filled with tuna salad, almond chicken salad or curried egg salad.

Tips & Warnings
  • Add a little bit of sugar to the dough and sprinkle the tops of the scones with coarse sugar before baking for a not-so-sweet strawberry shortcake dessert.

on 9/5/2009 These scones are a terrific idea, and I like the suggestion to add a chicken or tuna salad to them.
