Things You'll Need:
- 1 1/3 cups finely crushed vanilla wafers
- 2 Tablespoon sugar
- 1 1/2 Tsp vanilla extract
- 5 tablespoons butter melted
- 8 Cups strawberries
- 2 Tablespoons water
- 2/3 Cup sugar
- 2 Tablespoons cornstarch
- 1 Tablespoons lemon juice
- Whipped cream (optional)
-
Step 1
Preheat oven to 350 degrees.
-
Step 2
Combine wafer crumbs, sugar, 1/2 tsp of the vanilla and butter. Press into a 9 inch pie dish. Bake 10 minutes or until beginning to brown. Take it out of oven and let it cool.
-
Step 3
Slice 2 cups of the strawberries and combine with 2 tbs water in a saucepan. Bring to a boil over high heat. Mash the berries as they are cooking. Cook 2 minutes after boiling or until strawberries are very juicy.
** If you want it really smooth you can put through a sieve. Make sure you have 1 cup of mashed berries after cooking. If not add a bit of water. -
Step 4
Combine sugar and cornstarch in a pan. Gradually add in strawberry juice and lemon juice. Cook over medium heat until thickened. Boil 1 minute or until translucent. Remove from heat and stir in remaining vanilla.
-
Step 5
Place 1/3 of remaining berries in pie shell, drizzle with 1/3 of the glaze. Repeat two more times. Chill 2 hours or until completely set. Serve cold with whipped cream on top for extra pleasure.
