Shrimp & Turkey Stir-Fried Rice

Stir-fries are a quick and easy way to whip up a fresh and healthy meal. You can use a variety of vegetables, meats, herbs and spices to achieve any number of delectable combinations. This easy recipe is something I just made up one evening when I was low on cash and hungry for fried rice. All of the ingredients were already on hand.

Instructions

Things You'll Need:

  • 2 cups white rice
  • 4 cups water
  • 1 Tbsp butter
  • Dash of salt
  • 1 Tbsp sesame oil
  • 2 cloves garlic (minced)
  • 1/4 cup finely chopped green bell pepper
  • 1/4 cup finely chopped yellow onion
  • 1 cup frozen green peas
  • 2 eggs (scrambled)
  • 1/4 cup soy or tamari sauce
  • 1 Tbsp ground ginger
  • 1 lb frozen cooked shrimp (factory peeled and deveined)
  • 1 cup diced turkey ham
  1. Step 1

    Combine rice, water, butter and salt in a pot and bring to a rapid boil. Turn down the flame to low and cover. Allow rice to cook for about 20 minutes or until no water can be seen bubbling within the rice (check your brand's directions to plan accordingly). Remove from heat and set aside.

  2. Step 2

    Coat the bottom of a wok or large non-stick skillet with the sesame oil. Once the oil is thoroughly heated, add the garlic, onion bell pepper and turkey ham. Sauté until the onions are caramelized.

  3. Step 3

    Stir in the green peas. Push contents of wok to one side and add the scrambled eggs. When eggs are just slightly hardened, continue stirring all contents together.

  4. Step 4

    Add the cooked rice to the wok, thoroughly combining with the turkey, egg and veggie mixture. Add soy sauce and ginger, then stir until rice is fully coated.

  5. Step 5

    Add shrimp. Stir into rice just until shrimp is heated through, then remove from heat. Serve immediately. Garnish with crushed red pepper if desired.

Tips & Warnings
  • Use frozen bell pepper and onion mixes for an even quicker solution.
  • To save time, I used frozen cooked shrimp. Alternately you could use freshly peeled and deveined raw shrimp. Just cook until color is opaque.
  • For a healthier variation, use freshly grated ginger and add bean sprouts, spinach and shredded carrots.
  • Cook your rice the day before and refrigerate for better consistency. You could also purchase frozen rice at your local grocer.
  • ALLERGY ALERT: Eating shellfish can cause severe allergic reactions in those who are sensitive. Substitute chicken, pork or beef.
