Instructions

    • 1

Preheat your grill. If you have a charcoal grill it will take a while for the grill to heat up. For a gas grill, turn it on a few minutes before you want to put the burgers on.

    • 2

Don't go too lean. You need a little fat in your meat to get moist, juicy burgers. When you make hamburgers, you should never use ground beef that is more than 85% lean.

    • 3

Keep it cold. Make sure you keep the hamburger meat chilled until you are ready to form the burger patties. And then put them back in the refrigerator until you are ready to grill them. This will help to hold the shape of your burgers.

    • 4

Hands off. Don't handle the meat too much when you are making your hamburger patties. Keep your mixing quick, simple and to the point. Over mixing and over handling will result in tough burger meat.

    • 5

Never squish and don't cut. Try not to squeeze down on a burger with a spatula to see if it's done-all the juices will ooze out and make the hamburger dry. And resist the temptation to cut into a burger to see if it's cooked. Instead, touch it with your finger to see if it feels firm. An uncooked burger will feel soft.
