First I will tell you how to clean a catfish, place fish on a flat surface, maybe counter top, I use old news papers to cover counter top so that you don't damage or stain your counter top, using a sharp knife cut the whiskers
off from catfish because they can inflict a very painful sting, next cut the head off, pull the skin off, cut fish down the side, and remove inside intestines, filet and wash fish in cold water, next place fish in warm salty water for about 15 to 30 minutes.

When ready to cook there's several different ways to cook fish, you can bake it, grill it, or prepare it fried, just make sure you have it seasoned, if you prefer it fried you would need to batter it first, you can use fish batter, beer batter or you can just use your every day self raising meal or flour, after battering fish, make sure your cooking oil is hot before placing fish in oil.

on 6/24/2009 Catfish whiskers are not what stings you, it is a barb that is embedded in the fin that is located just in front of the gill. It is very sharp and can inflict a painful cut on you if your not careful. I would also reccomend skinning a catfish before cooking or freezing. another easy recipe for panfrying catfish, is to dip in water then egg and dredge in a flour mix of flour salt pepper garlic and paprika then panfry till deep brown on both sides. the paprika helps to give it a deep coloring.
