How to Open Oysters With Heat
Oysters with a splash of the right sauce can be a delicious start to an even better dinner. With oysters, though, as with any other shellfish, the trouble comes when it's time to get through all the armor on the outside. There are many methods to opening an oyster. You can pry it open with a knife or a screwdriver or crack it open by smashing it against a rock. Those are messy ways to do it. Put the oysters in the microwave on high heat for a minute or two, and watch them while the heat is applied. Stop the microwave when the oysters open, because you don't want to cook the oysters--you only want them opened. The oysters will be hot, so be careful when removing them.

Boil the oysters for a few minutes, checking them often to ensure that you're not cooking them. Boiling takes longer than microwaving them, so give the oysters 5 to 7 minutes before checking on them.

Steam the oysters. Steaming is ideal, because you can stand over the oysters and watch them the entire time they're over the heat. They will only over-steam if you neglect them altogether. Steaming takes longer than microwaving and boiling, but the oysters will turn out better than they will with the other methods.

Put the oysters in a broiler or on a grill. Place the oysters on the broiler or grill cup side down and close the lid. The shell should open in 7 to 8 minutes.
