To get started you ill need a large crock, about 4 quarts of sweet Birch twigs, 1 gallon of honey, 3-4 gallons of Birch sap, soft yeast, and one slice of Rye bread. You must first place approximately 4 quarts of cut twigs into a 5 gallon crock. Next, you want to boil both honey and Birch sap together for 20 minutes.

Next, you must pour your honey and Birch sap mixture over the twigs slowly. Once you have pour all of the mixture over Birch twigs a cooling period of about 45 minutes is required before the final step.

Step 4
Finally, you must spread some yeast evenly over the Rye bread and float on top of your mixture. You must then cover the mixture in a sealed bottle or container and allow to ferment for about 7 days. Chill prior to serving.
