When planning the perfect barbecue, the way you prepare your food is important. Grilling seafood is always a favorite with guests, and lobster is an extremely popular choice. Barbecued lobster tail is a decadent treat that is simple to prepare and make for a large or a small group.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 4 deep red lobster tails (fresh is preferred)
  • 4 sticks of butter
  • 8 peeled, split garlic cloves
  • 2-oz. can of tomato juice
  • 5-lb. bag of charcoal (ready light, no lighter fluid needed)
  • 1 charcoal grill
  • 1 box of matches
  • 8-by-5 inch sheet of aluminum foil
  • 1 lb. cooked linguine
  1. Step 1

Fill the charcoal grill with the ready-light charcoal, and light it in various places. Cover with a clean grill and let the charcoal burn until it is no longer black. The coals should be glowing red. While waiting for the coals to burn, place the lobster tails on a sheet of aluminum foil, with the meat of the tail pointing upward.

  2. Step 2

Place 4 split garlic cloves on each lobster tail, making sure to wedge the split cloves into the meat of the lobster tails. Follow up by placing a whole stick of butter on each tail.

  3. Step 3

Place the lobster tails on the grill, with the butter facing up and cover the grill. Leave alone for about 10 minutes. Flip the lobster tails over after the butter has melted into the tail, and let it sizzle for about 5 minutes. The lobster tails should be fully cooked by this point.

  4. Step 4

Remove the lobster tails from the grill, and place on top of the cooked linguine, cover with tomato juice and serve immediately.
