How to Make Rice Cooker Chicken Florentine

Rice cookers are for lots of other meals besides rice. Discover how to fix your whole meal in a rice cooker. Here is a simple recipe to start with: rice cooker chicken Florentine. It's your whole meal in one pot.

Instructions

Things You'll Need:

  • Rice cooker
  • rice
  • fresh salad spinach in a bag, around 1/2 of a bag or a small package of frozen spinach,
  • Parmesan cheese, the kind you sprinkle on pizza: 1 1/2 cups
  • shredded cheese: 1/2 cup to 1 cup...a white cheese is best.
  • frozen boneless chicken breast (one large or two tenderloin.)
  • 1/2 cup mayo
  • Cream of mushroom soup, one can
  • One cup of rice
  • vegetable oil
  • Minced dried onions, cheap ones from dollar store!
  • Garlic powder, salt and pepper
  1. Step 1

    Place three tablespoons of oil in bottom of rice cooker, swirl it around to coat up the sides. Add One cup of rice and two cups water. Also add three tablespoons of minced dried onion, 1 teaspoons garlic powder, and a teaspoon of salt.

    Place chicken in rack on top, and replace lid.

    Oil the pan that goes on top of the rice cooker and place chicken on it. Salt, pepper and put a little more garlic powder on the chicken. Place lid on rice cooker.

  3. Step 3

    Allow rice and chicken to cook. After around ten minutes, turn the chicken, add garlic and salt to top of chicken. Then place the spinach on top. Add one tablespoon of minced onion and salt. Replace lid and allow to cook some more. You might need to hit the cook button again if it has gone to warm.

  4. Step 4

    It doesn't take long for the chicken to be done. If you use frozen spinach instead of fresh, it will take a little longer. Cut the chicken in the pan it's in and then dump chicken and spinach into rice.

    Add 1 1/2 cup Parmesan, one can cream of mushroom, 1/2 cup of mayonnaise, salt and pepper. Top with shredded cheese. I used Colby jack in the pictured entree. White cheese is best.
    Top with more Parmesan if desired. Hit the cook button again, or let it stand on warm for around half an hour. It needs to stand awhile for the cheese to melt.

Tips & Warnings
  • As I said, I used my smallest rice cooker for this; I have three! If you are using a larger rice cooker, use two cups of rice, four cups of water and two cans of cream of mushroom soup. On the top, use two large chicken breasts or four tenderloins. The amount of spinach is kind of flexible. One package of frozen or a little more than half of a salad spinach bag will do. You will need probably at least 2 cups of Parmesan, but if you don't have that much, it will just not be as "CHEESY" ...which is ok. This small rice cooker version is very, very Parmesan-heavy. If you don't like Parmesan cheese, you might not want as much.
  • A rice cooker is not a crock pot. You need to monitor it for burning. But, some sticking is inevitable with a rice cooker. You just have to let it soak and it is easy to clean. Two of my rice cookers are non-stick surfaces, and they still stick just a little. Clean-up is really very easy.
