How to prepare Grilled Tilapia Maque Choux

Maque Choux (pronounced mock-shoe)is a wonderfully tasty and an easy sauce to make. This Tilapia Maque Choux is one of my favorites.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  1. Step 1

    Step One: Ingredients

    4 Tilapia Filets
    1 teaspoon olive oil
    1 teaspoon butter
    White Wine


    Maque Choux Ingredients:

    2 tablespoons Olive Oil
    Red Onion, chopped
    1 green pepper diced, seeded & diced
    4 ears of corn on the cob, husked
    cayenne pepper
    4 garlic cloves, minced
    1/4 cup celery (approx 2 stalks)
    1 cup diced tomatoes
    1 teaspoon capers
    sprinkle of lemon juice
    Salt & pepper

    Step Two: Preparation

    I start the meal by preparing the Maque Choux. Take your husked corn and place in a bowl reserving all corn liquid or "milk".

    Melt butter in a sauce pan. Add you corn and make sure you get all the "milk" from the corn as well. Add your chopped red onion, garlic, celery, and green pepper. Season with salt & pepper until thoroughly heated.
    Next, add your diced tomatoes, capers and season with cayenne pepper (to your taste). This will cook for approx 15 minutes on low-medium heat.

    Step Three:

    While your Maque Choux is cooking, prepare your tilapia. Heat olive oil and butter in pan. Season with salt & pepper. Add a drizzle of white wine. Cook covered for 5-10 minutes on medium heat.

  4. Step 4

    Step Four: Serving

    On your serving plate, spoon your Maque Choux onto the plate. Top with your tilapia fillets. Pour the sauce in the pan on top of the tilapia. Garnish with fresh cut parsley or with a sprinkle of cayenne pepper.

    You can serve with brown or yellow rice and a nice salad.

Tips & Warnings
  • I serve with a glass of Chardonnay or Voigner with this meal.
