Shrimp and snow pea stir fry in ketchup based sauce. Good side dish for cooked rice. Recipe yields 4 servings.

Instructions

Things You'll Need:

  • 1 pound raw medium-sized shrimp, fresh or frozen, deveined
  • 2 teaspoons cornstarch
  • 2-1/2 tablespoons canola oil
  • 1 teaspoon grated fresh ginger
  • 3 garlic cloves, finely minced
  • 1-1/2 tablespoon finely sliced green onion
  • 1/2 pound snow peas
  • 2 teaspoons sugar
  • 1/2 cup chicken or vegetable broth
  • 3 tablespoons ketchup
  • 1 teaspoon rice vinegar (or white vinegar)
  • 1/2 teaspoon sesame oil
  1. Step 1

    Wash and dry the shrimp with paper towels. Place them in a bowl and coat with the cornstarch. Blanch snow peas in boiling water, 2 minutes, drain.

  2. Step 2

    Mix together 2 teaspoons sugar, 1/2 cup chicken or vegetable broth, 3 tablespoons ketchup, 1 teaspoon rice vinegar and 1/2 teaspoon sesame oil to make a sauce. Set aside.

  3. Step 3

    Heat a frying pan with 1-1/2 tablespoons canola oil on high, swirl to coat. When oil is very hot, saute shrimp, toss and stir for 2 minutes. Transfer shrimp to a plate. Reserve oil in the skillet.

  4. Step 4

    Additional 1 tablespoon canola oil to the pan over medium heat. Add the ginger and garlic, fry until fragrant, about 20 seconds.

  5. Step 5

    Pour in the sauce to the skillet and bring to boil. Add the snow peas and return cooked shrimp into the pan. Simmer for an 2-3 minutes minute until the peas are cooked through. Turn off heat and top with sliced green onions. Serve with steam rice.
