King crab etouffee served with rice. If you love Creole and Cajun food, make this dish and your taste buds will thank you.

Instructions

Things You'll Need:

  • 2 cups uncooked rice
  • 2 pounds King crab legs, fresh or frozen
  • 1/4 cup vegetable oil
  • 1 cup green onions, chopped
  • 1 cup celery, chopped
  • 1/3 cup green bell pepper, chopped
  • 1/3 cup red bell pepper, chopped
  • 2 teaspoons garlic, minced
  • 2 bay leaves
  • 1/2 cup clam juice
  • 1 tablespoon flour
  • 2 tablespoons fresh parsley, finely chopped
  • 1 cup onion, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  1. Step 1

    Thaw crab, if using frozen. Rinse crab with shell on under cold running water. Remove crab meat from shell and cut into bite-size pieces. Reserve.

  2. Step 2

    Cook rice according to direction on packaging.

  3. Step 3

    Add cooking oil in a large pan over medium-high heat. When oil is hot but not to smoking point, add celery, onion, the green and red bell peppers. Saute vegetables over until soft, 10 to 12 minutes, uncover.

  4. Step 4

    Meanwhile, in a bowl, combine clam juice and 1/2 cup water and clam juice then add flour. Blend well. Set aside.

  5. Step 5

    Add bay leaves and garlic to the cooking vegetables. Reduce heat to medium-low.

  6. Step 6

    Gradually pour clam juice mixture into pan while stirring the vegetables. Stir continuously until the mixture starts to thicken.

  7. Step 7

    Add crab meat and green onion. Cook 6 minutes more or until mixture is cooked through. Discard the bay leaves. Mix in the parsley, cayenne and salt. Top on rice and serve.

    Makes 4 servings.
