How to Make Breakfast for Gestational Diabetes

You're pregnant. Such fun! You have been diagnosed with Gestational Diabetes. What a challenge! Breakfast was truly the hardest meal of the day for me to make quickly until I discovered the Open-Faced Egg Muffin Melt. This quick and easy breakfast takes minutes to make and will satisfy both your diabetic dietary needs as well as your morning hunger.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1/2 of 1 fiber-rich whole grain English muffin.
  • 1 slice of cheddar cheese
  • 1 slice of deli ham cut in half
  • 1 egg or egg substitute of your choice
  • up to 1 tsp margarine
  • stove for preparation
  1. Step 1

    Slice English muffin and store the other half for later. This will satisfy your 1 starch allowance for breakfast. Toast to your liking.

  2. Step 2

    Cut large slice of deli ham in half and microwave for 11 minutes. This will satisfy 1/2 to 1 complete protein depending on the thickness of the ham.

  3. Step 3

    Scramble your egg or egg substitute and then squash together in the pan so the egg looks like a patty. Remove from the flame and place cheese slice on top. Allow to melt over egg patty while preparing the toast. This will satisfy 1 and 1/2 proteins.

  4. Step 4

    Spread margarine on English muffin and place heated ham directly on the top. Using a spatula, carefully scoop cheesy egg patty on to the top of the ham slice. Enjoy!

Tips & Warnings
  • Total dietary meal: 1 starch, 2 and 1/2 proteins and 1 fat.
  • Thin sliced deli meat can cut the total proteins to 2.
  • Total meal preparation time and cooking 10 minutes.
  • Always consult with your physician or diet management consultant before making changes or additions to your recommended meal plan.
