How to Make a Super Burrito

This burrito is awesome, if you like the Chipotle style burrito, this will be up your alley.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1/2 lb to 1 lb of bonless chicken breast meat, or your choice beef/pork etc.
  • 1 27oz can or 2 small cans of Luck’s Pinto Beans (or your local brand)
  • 1 to 2 cups of minute rice
  • Chicken boulion cube
  • Pico De Guilo or your favorite salsa (see my recipe on how to make pico de guilo here http://iowasgourmetsalsa.com/blog/?p=29)
  • 2 Avacados
  • 1 tub of sour cream
  • lime juice
  • 1 McCormick Grill Mates Montreal Steak Marinade pack
  • 1 Pack of extra large flour tortillas
  • 1 Brick of your favorite cheddar cheese
  • You can substitue the beans and rice with Zatarains Black beans and rice
  1. Step 1

    First take your meat and put in a zip lock back with the Grill Mates Montreal Steak marinade, put a little bit of oil in the zip lock bag also and zip it up, shake the bag around so as to coat all the meat with the marinade. Be careful not to shake the bag open. Put in fridge for at least 1 hour.

  2. Step 2

    Second prepare your Pico De Guilo, follow my recipe on how to make. Then make guacamole buy pealing your avacados and removing the pits, place in a bowl and put a little lime juice in, smash them till they are creamy, put a little pico de guilo in, salt to taste.

  3. Step 3

    Now start to heat up your beans, and rice, put meat on grill cook until done. If you are using the minute rice, put the chicken boulion cube in while the water is boiling, and follow the minute rice cooking directions.

  4. Step 4

    Once everything is heated and cooked you will shred some cheese, place some on a flour tortilla and put in microwave for about 30 seconds, place rice, beans and meat on flour tortilla, then pico de guilo, sour cream and guacamole, fold and wrap in foil, and enjoy.

on 6/22/2009 yeah.. tasty, and they not bad for you, if you use chicken and cook on the grill.. with just bonless chicken breast, the only really bad thing is the sour cream.. but as always in moderation it is fine. i like lots of the pico de guilo
