With warmer days approaching a light and healthy treat may be needed to beat the heat. Here is a way of making a healthy homemade ice cream with Quinoa.

Instructions

Things You'll Need:

  • 1 CUP OF MILK
  • ¼ OF A CUP OF CREAM
  • 1 CUP OF COOKED QUINOA
  • 1 Peach or selected fruit
  • 1 Tablespoon of Honey
  • 4 tablespoons of sugar
  • 1 teaspoon of Vanilla Extract (optional)
  • Blender
  • Ice Cream Maker (optional)
  • Medium sized container (optional)
  1. Step 1

    Preparing Ingredients:
    Use one cup of the cooked quinoa, one sliced and peeled peach and milk as the main ingredients for the healthy homemade ice cream recipe. The quinoa is easily cooked by taking a cup of dried quinoa seeds and washing thoroughly. Wash and strain the quinoa till the water is clear and free from any white residue. Add the washed grain to a pot with three cups of water. Let this cook for about 20 minutes in low heat till the grains are firm and fluffy. The rest of the quinoa could be refrigerated for other recipes.

    Blend to a puree.

    Blend Ingredients:
    Begin by blending the ingredients that will be used for this healthy ice cream recipe. Take one cup of cooked quinoa, one sliced peach, one cup of milk, quarter of a cup of cream, vanilla extract, sugar and blend to a full puree.

    Mix and Freeze

    Mix and Freeze Ingredients:
    Pour the puree mix into the ice cream maker and set to a slow mix setting. Mix the puree to a rich and creamy serving texture. As an alternative to an ice cream maker, try pouring the puree mix into an empty container. Freeze and mix continuously to reach the desired texture.

Tips & Warnings
  • Try using low fat milk and powdered sugar.
  • Feel free to subsitute peach with fruit of choice.

on 7/31/2009 So i just tried out this recipe (and i think out of all these reviews, the FIRST to actually make it)and it was good! I could tell there was something off but the quinoa was barely noticeable. Instead of using a peach i used strawberries, and for anyone who is planning on making this, use a lot more fruit! I put in a lot of strawberries and my ice cream was still lacking that flavor. Also while churning i added squished up strawberries (with their juice) for some added texture. Overall great recipe! if i made ice cream often i would definitely add this to my list. I would have never known that by eating this ice cream i was getting great protein and all the other benefits of quinoa!
PS- in the ingredient list you listed honey but then didn't mention it in the directions, so i just added it to the puree mixture.
