If you've got more blueberries than you can possibly eat, blueberry sauce is a wonderful way to use them. Make a large batch and can some for the cold months ahead!

This blueberry sauce is sweetened using honey instead of sugar. It has a perfect taste; not too sweet, not too bland. You can use fresh or frozen blueberries. Try it over pancakes, cheesecakes, ice creams, or pound cakes. The possibilities are endless!

Instructions

Things You'll Need:

  • 1.5 Cups blueberries
  • 3 Tablespoons honey
  • 1 Tablespoon lemon juice
  • 1 Tablespoon cornstarch
  • 1/4 Cup cold water
  1. Step 1

    In a small saucepan, combine 1.5 cups blueberries (fresh or frozen), 3 Tablespoons honey, and 1 Tablespoon lemon juice. Bring the mixture to a boil on medium high heat, stirring constantly. Once boiling, turn the heat down to medium.

  2. Step 2

    Meanwhile, combine 1/4 cup of cold water and 1 Tablespoon cornstarch in a small bowl. Mix together with a fork until smooth.

  3. Step 3

    Add cornstarch/water mixture to the saucepan and stir on medium heat. Once sauce thickens, remove from heat.

  4. Step 4

    Serve over your favorite pancakes, cheesecake, cake or ice cream!

Tips & Warnings
  • Makes 4 servings
  • If you are planning to use this recipe in canning, use modified cornstarch/Clear Jel rather than regular cornstarch.
  • Always use caution when cooking over a stove top.
