Looking for a way to prepare tender, evenly cooked meat that's packed with flavor? Use a rotisserie on a grill. Your beef or chicken rotates slowly over low heat and absorbs the fabulous flavor of the rub or marinade you applied beforehand. Your grill may have a rotisserie attachment, or you can buy a rotisserie designed for your model. Either way, all you have to do is skewer the food, close the grill lid and end up with a delightful dinner.

How to Use a Rotisserie Grill

  1. Step 1

Apply a rub or marinade to get your meat or poultry ready for the grill.

  2. Step 2

Use kitchen string to tie up the legs and wings of poultry so they stay put on the rotisserie.

  3. Step 3

Put the meat in the middle of the rotisserie spit. Roll the spit in your hands to see whether it's balanced. Adjust the position of the meat if necessary.

  4. Step 4

Put a drip pan under the meat or poultry -- use one big enough to catch all the drippings. Putting about an inch of water in the drip pan keeps the food from drying out.

  5. Step 5

Start the rotisserie motor and check to make sure it's working well. Turn your burner on low heat.

  6. Step 6

Use a meat thermometer to determine when the meat is done.
