Jersey Potato Salad

New Jersey is famous for its blue crabs. So in Jersey fashion, I created a Jersey Potato Salad recipe. Blue crabs may not be available in all areas, but you can substitute Blue Crab meat with fresh or canned crab meat.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Recipe
  • Large serving bowl
  1. Step 1

    Step One: Ingredients

    3 pounds red skinned potatoes, cut
    1 red onion - chopped
    1 cup mayonnaise
    1 cup sour cream
    1/4 c. Dijon mustard
    2 cups Blue Crab meat or 1 can crab meat or 1/2 pound fresh crab meat
    1/2 c. frozen peas
    1/2 cup bacon - cooked & broken into small pieces

  2. Step 2

    Step Two : Prepare

    Bring water to boil & cook cut potatoes. (do not over cook or make too soft). Once your potatoes are done cooking, place in your large serving bowl.
    Cook your bacon in a separate pan. Cook until crispy. Drain.
    Add your peas, onions, bacon, and some black pepper. Refrigerate until cold.
    Combine your other ingredients in a separate bowl. Once mixed, stir into your potato mixture until thoroughly mixed together.
    Do the taste test. Season as desired. Refrigerate.

  3. Step 3

    Step Three: Serving

    When you are ready to serve, garnish your potato salad with paprika, parsley, bacon or black pepper.
