This fudge recipe is very versatile. You can either make it a peppermint flavor fudge, or a vanilla flavor fudge depending upon the extract you use. This recipe is very easy and is great to give as a gift at Christmas, or just to have at any time.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 12 oz. package white chocolate chips (or vanilla milk chips)
  • 1 6 oz. can vanilla frosting (NOT WHIPPED FROSTING)
  • 1/2 tsp. peppermint extract
  • 4 drops red food coloring
  • 2 Tbsp. finely crushed peppermint candy
  • 8x8 square pan
  • waxed paper
  1. Step 1

Line an 8x8 square pan with waxed paper and set aside. Melt the chips in double boiler and stir until smooth. Spread mixture into the pan. Drop red food coloring on top and swirl through the mixture with a knife.

  2. Step 2

Put approximately 5-8 hard peppermint candies (not the soft peppermint) into a freezer bag and close. With a rolling pin, crush the candy until it is in very small pieces. Spread crushed peppermint candy on top pressing candy lightly into the mixture and refrigerate for at least 1 hour.

  3. Step 3

Once firm, turn pan upside down on a cutting board and peel off waxed paper. Cut into 1/2 inch squares. Keep fudge in an airtight container.

Tips & Warnings
  • Make two batches of this fudge, one with red food coloring and the other with green food coloring.
  • To make vanilla fudge, substitute the peppermint extract with vanilla extract.
  • DO NOT USE WHIPPED ICING. If you use whipped icing, the fudge will not solidify properly.
