Attention chocolate lovers! These double chocolate chip cookies are so moist and decadent, you'll want to keep them all to yourself. Having a brownie-like texture, I don't consider them quite cookies, but they are delicious either way! This recipe yields 4-dozen cookies, so it's great for bake sales, gift baskets, or just an after-school snack for the kids!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • ½ cup butter
  • 4 (1-oz) squares unsweetened chocolate, chopped
  • 3 cups (18-oz) semisweet chocolate morsels, divided
  • 1 ½ cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 4 large eggs
  • 1 ½ cups sugar
  • 2 tsp vanilla extract
  • 2 cups chopped pecans, toasted
  1. Step 1

Combine butter, unsweetened chocolate, and 1-½ cups chocolate morsels in a large heavy saucepan. Cook over low heat, stirring constantly, until butter and chocolate melt; cool.*

  2. Step 2

Combine flour, baking powder, and salt in a small bowl; set aside.

  3. Step 3

Beat eggs, sugar, and vanilla in a medium mixing bowl at medium speed with an electric mixer. Gradually add flour mixture to egg mixture, beating well. Add chocolate mixture; beat well. Stir in remaining 1 ½ cups chocolate morsels and pecans.

  4. Step 4

Drop dough by 2 teaspoonfuls 1-inch apart onto parchment paper or wax paper-line cookie sheets. Bake at 350F for 10 minutes.

  5. Step 5

Cool slightly on cookie sheets; remove to wire racks to cool completely.

Tips & Warnings
  • Instead of melting the unsweetened chocolate and butter in a saucepan directly over the stove, which increases the risk of burning the chocolate mixture, use the double-boiler method. Fill a large saucepan with water and bring to a slow boil. In a heat-proof bowl about the same size as the saucepan (I use Pyrex), combine the unsweetened chocolate and butter. Place the bowl on top of the boiling saucepan, careful not to burn yourself as the bowl will get hot. Stir to combine as ingredients melt. The heat from the boiling water will warm the bowl and melt the ingredients without the risk of burning.
