      Wash regularly. Use a mild soap solution to wash your butcher block after every use. Be sure to rinse off the soap and wipe dry. If you're using a butcher block cutting board, do not store it until it is completely dry.

      Disinfect after preparing meat or poultry on your butcher block. Mix a mild disinfectant with one part bleach to 10 parts of water. Spray this on the surface that came in contact with meat or poultry and leave it for 10 minutes. Rinse with water and allow to air dry.

      Deodorize the surface. You can occasionally deodorize your butcher block by applying lemon juice to it and allowing it to sit for 10 minutes. Rinse with water and allow to air dry.

      Oil your butcher block once a month to prevent it from becoming brittle. Mineral oil works best because it is odorless and tasteless.
