This is a tamale recipe that I got from a friend and I have changed it a little. It is a great way to stretch tamales.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 pound of ground meat
  • 6-12 fresh tamales
  • 2 cups of frozen whole corn
  • 1 can of cream of mushroom soup
  • 1 can of black beans or red
  • 1 onion
  • 1 bell pepper
  • 1-2 tablespoons minced garlic
  • 1 can of cream corn
  • 1 can or 2 cups of Rachel Ray's chicken stock
  • 1 can of rotel tomatoes with green chilies
  1. Step 1

    In one tablespoon of Olive Oil sauté bell pepper, onion, and garlic. When they are sauted, I put in my crock pot. Then I throw in the ground meat and brown it. Drain the fat off and add to the Crock Pot.

  2. Step 2

    Add all the rest of the ingredients to the crock pot. When you go to put the tamales in, cut them into bite sizes, and take off the paper and discard the paper. Cook on low until everything is hot. Check the seasoning, and add salt and pepper to your own taste. You can serve over fritos or with cornbread, or hot french bread.

  3. Step 3

    Enjoy! If you want to double the recipe, just double everything. Two cans, two pounds, etc..or three cans, three pounds, etc.
