Make Your Own Jerk Seasoning

Jerk is a style of cooking native to Jamaica where meats are dry-rubbed with a hot spice mixture called Jamaican jerk spice. The flavors you will experience when you eat grilled meat with this rub are quite different than what you might be accustomed to. Use this very simple recipe to make your own Jamaican jerk seasoning and use it at your next barbecue!

Instructions

Things You'll Need:

  • 1/2 cup ground allspice berries
  • 1/2 cup packed brown sugar
  • 6-8 cloves of garlic
  • 4-6 scotch bonnet peppers (or jalepeno)
  • 1 tbsp ground thyme
  • 2 bunches green onions
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • salt & pepper to taste
  1. Step 1

    In a food processor or blender/grinder combine all ingredients. (For the allspice, use whole allspice berries and grind them in a coffee grinder or with a mortar/pestle. Do not use allspice powder, you wont get as much flavor.)

  2. Step 2

    Start out adding a small amount of salt and pepper, then add more to the meat as needed. Remember how much you like to use for the next time you prepare your Jamaican jerk seasoning.

  3. Step 3

    Make sure the peppers (either scotch bonnet or jalepeno) have the stems and seeds removed. Add more peppers if you like your jerk seasoning extra spicy.

  4. Step 4

    Blend all ingredients in the food processor. Start out blending them until smooth to try the recipe, then make it as chunky as you would like next time. The traditional recipe does not include grinding, the seasonings are left mostly whole.

  5. Step 5

    HOW TO USE THE JERK RUB
    Using your bare hands, rub the Jamaican jerk seasoning directly onto the skin of the meat. (This can be used with any meat, but is especially tasty on chicken and pork). If using a tougher meat, score the top with a knife, then rub the Jamaican jerk seasoning in well.

  6. Step 6

    Marinate the meat overnight and the grill over a low fire. Slow cook the meat on a charcoal grill until the outside is slightly charred. This is the perfect Jamaican jerk barbecue!
