How to Cook Prawns on a BBQ Grill

Prawns are often grilled in place of shrimp because of their larger size. They cook up quickly and accept marinades easily, which adds a burst of flavor. Threading them on wooden or bamboo skewers helps you get them off the grill fast so they don't overcook. Does this Spark an idea?

Instructions

      Remove head and legs from prawn. Peel off shell. Use the tip of a small knife to remove the vein running down the center of the outside curve. Leave the tail on.

      Thread prawns onto wooden skewers that have been soaked in water for 20 minutes. Insert skewer in the fat section near the head and also the tail, taking advantage of the prawn's natural curvature. Place in marinade while the grill preheats.

      Preheat grill to medium hot, or about 325 to 350 degrees. The grill is medium hot if you can hold your hand about 4 inches above the coals for 6 to 8 seconds before it gets too hot to keep it there.

      Oil the grill lightly. Remove prawns from marinade and place directly on the grill over medium heat.

      Grill for 2 to 3 minutes on one side and then turn. Continue grilling 1 to 2 more minutes until they turn pink, then remove from heat immediately. Do not overcook; they will become tough and rubbery.

Tips & Warnings

  • Marinate prawns in a mixture of equal parts lemon juice and olive oil. Add garlic, if desired, and any other herbs you normally use for seafood. Marinades are not an exact science. As long as there is an acid (lemon juice, vinegar, or wine) and oil, they will add flavor and tenderness to whatever protein you use.
