A refreshing salad for the hot summer months - this Summer Salad makes use of bold colors and pulls together unique flavors.
While it is is simple to put together, it is anything but an ordinary salad.
The spice in the Pepper Jack Cheese contrasts richly with the sweetness from the Strawberries, while the juicy grilled chicken makes it a bit more hearty and the Spinach and dressing ties it all together.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Bag of Baby Spinach
  • 8 Large Strawberries
  • 2 Boneless Skinless Chicken breasts
  • 1/4 cup Pepper Jack Cheese
  • Poppy seed dressing
  1. Step 1

    Lightly salt and pepper the Chicken Breasts and grill the Chicken breasts until thoroughly cooked.
    Once cooked, let cool completely and then cut into bite size pieces.

  2. Step 2

    Wash Spinach and Strawberries.
    Remove greens from Strawberries and quarter.

    Dice the cheese.

  3. Step 3

    Combine the Spinach, Strawberries, Pepper Jack Cheese and Chicken in a bowl.
    Pour desired amount of Poppy Seed dressing over the salad.
    Keep refrigerated until ready to serve.

  4. Step 4

    An alternate idea to serving this as a salad straight from the salad bowl is to serve it on tortillas. Slightly warm tortillas - on the grill, in the oven or in the microwave - and spoon the salad into the center of tortilla. Roll up as you would a wrap and enjoy!

Tips & Warnings
  • The Pepper Jack Cheese offers a unique flavor with it's spicy zip. It blends beautifully with the refreshing sweetness of the strawberries, so don't substitute the cheese!
  • Serve the salad in a glass bowl. It is so colorful and pretty you will want to show it off!
  • Serve on homemade for tortillas for an easy and yet huge and delicious wow factor
  • Make certain the chicken has thoroughly cooled before you add it to the salad.
