How to Fry Eggs Without Broken Yolks
There are several ways to serve a fried egg. Depending on the way you cook it, you can serve it up runny, over-easy, over-hard or steamed. No matter which way you choose, however, it won't work if the yolk is broken. Keeping the yolk intact is one of the most difficult aspects of frying an egg, and there are several techniques you can use to keep from breaking the yolk. Does this Spark an idea?

Choose a non-stick skillet if you have one. It is possible to fry eggs without breaking the yolk in other types of pans, but non-stick skillets work best.

Pour oil, butter, grease or whatever you choose to cook your eggs in, into the skillet. Use just enough to coat the bottom of the skillet.

Turn the burner on medium-high and let the pan heat up before you put your egg in. If the pan is hot, the egg whites will set quickly and hold the yolk in place.

Crack the egg and pour it slowly into the hot pan. Hold the shell as close to the pan as possible when pouring the egg to reduce the chances of the yolk breaking.

Use a spatula without slots to flip your egg, if you choose to flip it. A smooth spatula will be easier to slide under the egg.

Slide the spatula under the egg in one swift, quick motion.

Lift the spatula only a few inches off the pan when flipping the egg. If it doesn't have far to fall, the chances of the yolk breaking are smaller.

Flick your wrist quickly to flip the egg instead of using an exaggerated motion. Be smooth and fast with your actions.
