Things You'll Need:
- 4 ounces walnuts
- 1/2 cup sugar
- 1/4 cup pure honey
- 1/2 pound prawns, shelled and deveined
- 2 egg whites
- 1/4 cup cornstarch
- 1/2 teaspoon rice vinegar
- 2 teaspoons mayonnaise
- 1-1/2 teaspoons sweetened condensed milk
- 1 teaspoon white sugar
- 2 tablespoons raisins (optional)

Step 1
Heat a saucepan with walnuts and cold water over high heat. Bring to a boil and keep it this way for 10 minutes.

Remove walnuts using a strainer from boiling water. Drain water and refill saucepan with fresh water. Add 1/2 cup sugar into the saucepan,
return walnuts and boil for another 10 minutes. -
Step 3
While the walnuts are boiling, wash prawns and dry with paper towels. Peel and devien, leave tail shells intact if you wish. Set aside.

Coat walnuts with honey after removing them from boiling water. Make sure you coat each walnut piece evenly with honey.

Fry honey coated walnuts in a wok or skillet with 1 tablespoon oil until golden.

Add two tablespoons oil, mayonnaise, vinegar, sweetened condensed milk and 1 tablespoon sugar into the skillet, stir to mix. Heat mixture until very hot, but not smoking.

While waiting the oil to heat up: Have two bowls, one for the egg whites and the other for the cornstarch. Coat prawns first in egg whites and then roll them in cornstarch.

Carefully drop prawns into the hot oil. Fry them in the hot condiments mixture, 1 to 2 minutes. Transfer honey walnut prawns onto a large plate, top with raisins (optional). Serve with rice.
Serving suggestion: Arrange honey walnut prawns on a bed of mixed green salad, sprinkle with white toasted sesame seed. Use pure olive oil for dressing, if desired.
