Who doesn't love pizza? Easy peppered chicken and vegetable pizza recipe, mild hotness. You will be using prepared dough and simple every day ingredients to make your work easier.

Instructions

Things You'll Need:

  • 1 pound boneless chicken breast, cut into small cubes
  • 1 family size frozen pizza dough, 12 to 14 inches
  • 4 teaspoons fresh ground black pepper
  • 1 cup white button mushrooms, sliced
  • A handful of black olives
  • 1 vegetable cooking spray
  • 1/2 cup Mozzarella cheese
  • 1/2 teaspoon thyme
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 cup red onions, sliced
  • 1/3 cup green bell pepper
  • 1 cup red bell pepper, chopped
  • 1/4 teaspoon salt
  1. Step 1

    Preheat oven to 425 degrees F.

    Heat skillet with 1 tablespoon olive oil over medium-high. Add chicken, green bell pepper, garlic and black pepper. Stir fry for 2 minutes.

  2. Step 2

    Add red onions, mushrooms and thyme. Cook for another 2 minutes then add the chicken breasts. Cook until chicken is heated through. Set aside.

  3. Step 3

    If you bought the frozen pizza dough in a canister, unroll into a 12 to 14 inches diameter dough. Coat roughly a same size baking tray with vegetable cooking spray.

    Place dough in the greased pan. Sprinkle half cup Mozzarella cheese evenly over the dough. Spread sauteed chicken and vegetable over the cheese. Top with remaining 1/2 cup of Mozzarella, then add the olives.

    Bake at 425 degrees F for 12 minutes or until cheese is melted and crust is light brown. Serve while hot.

    For 4 to 6 persons.

    Notes: try 1 cup shiitake mushroom for a different taste. If using shiitake, first soak in warm water for 10 minutes, then thinly slice and saute as instructed in article Step 2. For a more spicy version, add 1 teaspoon more fresh ground black pepper or substitute 3 teaspoons dried chili flakes in Step 1.
