How to make Crockpot Hawaiian Chicken

It only takes a few minutes to prepare the ingredients for this Crockpot recipe. The ingredients are simple and readily available. The tropical flavors are very complimentary to the chicken.

Instructions

Things You'll Need:

  • 4 or 5 Boneless, Skinless Chicken Breasts(cut in half or thirds)
  • 2 large cans of Chunk Pineapple (drained)
  • 3 small cans of Mandarin Oranges (drained)
  • 1/4 cup Cornstarch,(mixed with small amount of water to make paste)
  • 1/2 cup Brown Sugar (packed)
  • 1/4 cup Teriaki Sauce
  • Dash of Red Pepper Sauce
  • Salt and Pepper to taste
  • 1 envelope Stir-fry-chicken seasoning blend (dry mix)
  • 4 tbls White Vinegar
  • Canola or Vegetable Cooking Spray
  • Long Grain White Rice (steamed) enough to make 6-8 servings
  1. Step 1

    In the bottom of a large capacity Crockpot, spray with cooking spray, add, teriaki sauce, brown sugar, red pepper sauce (opt), white vinegar, envelope of stir-fry chicken seasoning blend and salt and pepper. Combine well with spoon.

  2. Step 2

    Mix together in a seperate small bowl, the cornstarch, small amount of water, enough to make a paste as if you were making it to thicken gravy. Add to the ingredients in (Step 1)to the Crockpot, mixing together well. Drain pineapple chunks and mandarin oranges and add on top of other ingredients in Crockpot.

  3. Step 3

    Wash chicken and cut each chicken breast into halves or thirds. The pieces will fit better into your Crockpot if you cut them into pieces and will reduce the cooking time. Add the cut up chicken over the mixed ingredients in the Crockpot. Make sure you cut your pieces of chicken approximately the same size so they will cook evenly.

  4. Step 4

    Do not add any other liquid to the Crockpot. The chicken will produce enough liquid while cooking. Once or twice during cooking, gently stir and turn chicken over trying to keep the chicken pieces on top. Spoon some of the liquid over the chicken to keep moist. Try not to open the lid to the crockpot to often. It will slow the cooking time down.

  5. Step 5

    Set your Crockpot on "LOW" for 4 to 5 hours. Check at 3 1/2 hours in case your crockpot temperatures are higher. The cooking spray helps eliminate burning and makes cleanup much easier. Crockpot temperatures may vary. You may not have to cook this recipe as long, or it may take a bit longer.

  6. Step 6

    Follow the directions on the package of rice. Allow your rice to set for 3 to 5 minutes after it's done. With a fork, stir rice gently to make it fluffier. Spoon rice on plate for each serving and add desired amount of the chicken and sauce over rice. You can use a platter and spoon all of the rice on the platter and then add the sauce ingredient's in the Crockpot over the rice. Serves approximately, 6-8.

Tips & Warnings
  • As soon as you empty the crockpot with the recipe ingredients. Add warm water so cleanup will be even easier.
  • You can adjust the sweet and sour flavor by reducing or adding more, vinegar or brown sugar.
