Make Hamburger Potato casserole for dinner tonight! It’s so good your husband will ask where you got the recipe and the kids will beg for more. This casserole is so easy to make and requires little time to prepare, which makes it a great meal for a busy night during the week.

Instructions

Things You'll Need:

  • 5 potatoes
  • 1 lb. hamburger meat
  • 1 clove garlic, minced
  • 1 onion, minced
  • 1 can tomato soup
  • 1 small bag frozen green beans
  • 1 small bag frozen corn
  1. Step 1

    Preheat the oven to 375 degrees.

  2. Step 2

    Peel the skin off of the potatoes and cut them into small cubes. Place the potatoes into a medium pot on the stove and cook on medium high heat until soft. Mash the softened potatoes with ½ stick of butter and ½ cup of milk.

  3. Step 3

    Pour the olive oil into a medium sauce pan. Saute the garlic and onion until slightly brown, about 2 minutes.

  4. Step 4

    Break the hamburger meat into small pieces and place into the saucepan to brown well.

  5. Step 5

    Add the tomato soup to the browned meat mixture and stir well. Continue to heat over medium heat until boiling.

  6. Step 6

    Pour the green beans and corn into the meat mixture and heat until the vegetables are soft.

  7. Step 7

    Add the hamburger and vegetable mixture to a medium casserole dish. Top the mixture with mashed potatoes and place in the oven. Bake for 30 minutes.
