How to Make a Yeast Flatbread Recipe
No one wants to heat up the kitchen by baking bread in the summertime, so making flatbread instead might appeal to many cooks. Most flatbread recipes do not contain yeast, but that doesn't mean it can't be done. Experiment with this versatile recipe and get yeasty goodness with a slightly chewy and more puffy texture. Things You'll Need
- 1 cup whole wheat
- 1 cup white flour
- 1 cup hot tap water
- 1 tsp. salt
- 2 Tbsp. sugar or honey or molasses
- 2 Tbsp. oil
- 1 pkg. yeast
- Spoon
- Large mixing bowl
- Large measuring cup or bowl
- Rolling pin or tortilla press
- Griddle or frying pan

Add 1 cup of white flour and 1 cup of whole wheat flour to the mixing bowl. Add either 1 package or 1 tablespoon of dry yeast to the flour and 1 teaspoon of salt (or more if you prefer). If you're using sugar rather than honey or molasses, add 1 tablespoon to the other dry ingredients. Stir well to mix all dry ingredients.

Work 2 tablespoons of vegetable oil into the flour and spices with your fingers or a fork.

Add 1 cup of hot tap water to the large measuring cup or bowl. If you are using honey or molasses rather than sugar, add 1 tablespoon to the hot water and stir together well. Pour the water into the dry ingredients and mix until you have a soft ball that is not too sticky (add more flour to counter the stickiness) and not to stiff (add more oil to counter the stiffness). Let the dough rest for 30 minutes or more.

Divide the entire dough ball in half to get two pieces, then divide each half in half to have a total of four. Then divide each fourth into half for a total of eight balls of dough.

Flatten each ball of dough with a rolling pin or tortilla press. Let the dough rest a few minutes. Preheat the griddle or frying pan to a medium high heat. Cook each flatbread for a few minutes on each side until brown spots appear and the middle is done. As the bread puffs and bubbles, flatten it with spatula, pushing the air bubble around the whole inside before pressing firmly to release the air.

Tips & Warnings
Experiment with Indian and Mexican specialty flours that are available in most stores. New healthy flours are out there as well. Often, they are too heavy for these recipes, so mixing them with white flour will help.
If you want to experiment with other spices such as garlic, Chinese 5 spice, cumin, rosemary, sesame seed, add them to the other dry ingredients, then stir to mix well.
Try adding 1/2 cup of spinach, tomato or carrot puree to the hot water before adding it to the dry ingredients.
Use a little extra flour on the surfaces, while rolling out the dough.
