How to Make Potato Patties With Cooked Red Potatoes
Also known as potato pancakes, potato patties help you to save money by using leftovers. Reusing precooked red potatoes by making these patties can turn one meal into two. This can cut down on the amount of food waste. Since red potatoes are not as starchy as baking potatoes, you will need to add an egg to them as a binder. Things You'll Need
- Potato masher
- Deep frying pan with 2 inches of vegetable oil in the bottom or broiler pan
- Frying thermometer (or candy thermometer)
- 2 cups pre -ooked red potatoes
- 1/2 cup warm milk
- Two eggs
- 1/2 cup chopped onion
- 1/4 cup all purpose flour
- Salt and pepper to taste
- Spatula
- Paper towels or drainage rack

Place the cooked red potatoes into a bowl with the milk and coarsely mash with the potato masher. You can leave the skins on the potatoes.

Add the eggs, flour, and salt and pepper to the mashed red potatoes. Combine until the mixture comes together.

Preheat the cooking oil to 375 degrees F, or turn the oven to high broil.

Wait until the oil is hot to shape the patties. Using your hands, grab a fistful of potato and shape into a 3-inch wide patty. Repeat with the rest of the mixture.

Place the patties in the hot oil and fry for three to four minutes or until golden brown. Carefully flip each one with a spatula and fry on the other side for three to four minutes or until golden brown. You can also place them under the broiler for three to five minutes per side until browned.

Let drain on paper towels or on a drainage rack before serving.
