Things You'll Need:
- 3 cups Arborio rice
- 6 cups chicken stock
- ½ cup onion chopped
- ½ cup sweet pepper, red, orange or yellow
- 2 cloves minced garlic
- 1/3 stick butter
- ½ tsp Chinese five spice powder
- Pinch cayenne pepper
- 1/4 cup apple cider
- 2 ripe pears

Step 1
In a medium pot heat 6 cups of chicken stock. In a separate pot sauté ½ cup finely chopped onion, ½ cup finely chopped pepper (either red, orange or yellow), 2 cloves of minced garlic with the 1/3 stick of butter. Saute until the onions are nice and tender and starting to brown.

To the onion mixture add 3 cups Arborio rice, ½ teaspoon Chinese five spice powder and pinch of cayenne pepper. Stir constantly for about 3 to 4 minutes.

Lower heat to about a medium setting, add ¼ cup of apple cider. Continue stirring until all of the cider is absorbed.

Slowly add the 6 cups of chicken stock stirring constantly. Add a little at a time to give the arboria rice time to absorb the chicken stock. Cook until the risotto is creamy. (the rice will still be a little hard or al dente) It takes about 25 to 30 minutes to cook.

Step 5
Peel and chop the pears. Add to the risotto. Stir in ¼ cup Parmesan cheese. Add black pepper to taste. Continue to cook until the pear is warm.

Place in a serving bowl and sprinkle the remaining ¼ cup Parmesan cheese over the top.
