How to make good homemade noodles. This is an easy recipe that any one can make. I will give you an option to use meat or not.

Instructions

Things You'll Need:

  • flour
  • eggs
  • chicken broth or stock
  • chicken breast or whole chicken if you want to add meat
  • stock pot or soup pan
  1. Step 1

    Mix eggs in large bowl. Add a teaspoon of salt. The number of eggs depend on the amount of people. I usually use 6 eggs. I don't usually measure my flour but generally use 3/4 cup of flour to every egg. So for 6 eggs you would use 4 1/2 cups of flour. This is going to make a big pan of noodles.

  2. Step 2

    Put newspaper out on kitchen table. Put 1 to 2 cups flour on paper. Turn dough out into flour and roll 1/2 inch to 1/4 inch thick. We like our noodles thicker so I roll mine about 1/2 inch thick. Use a knife to cut into long strips. If you like your noodles thinner than roll the dough thinner. If you like them thicker and don't roll it out as much. You can always ball your dough back out and reroll

  3. Step 3

    Bring chicken stock or broth to boil over medium heat. Drop noodles into boiling broth a few at a time. Stir constantly so they do not stick to the bottom of the pan. Cook until noodles are tender. Add salt and pepper and cooked chicken. Serve with mashed potatoes for a great home cooked meal.

Tips & Warnings
  • Keep plenty of flour on your rolling pin and table so it doesn't stick to it.
  • Putting the newspaper out on the table makes for easy clean up. Just wrap up newspaper and throw away the mess.
  • Becareful dropping noodles into the broth so you don't splash yourself with hot broth.
