Things You'll Need:
- 1 Medium Acorn Squash
- Glass Baking Dish
- Extra Virgin Olive Oil
- Salt and Pepper

Step 1
acorn squashAt the grocery store, select an acorn squash that feels heavy for its size. A light squash means it has lost its moisture. It should have a smooth skin with no soft spots. The color should be a good balance between green and orange.

Step 2
cut and scoopUse a sharp knife to cut the squash in half. Use a spoon to scoop out all of the seeds.

Step 3
reassemble in dishCut the halves in half again. Reassemble the acorn quarters and place them in a glass baking dish. The skins should be facing up. Cover the dish with plastic wrap.

soft to touchMicrowave for 4-5 minutes. Let the squash sit for 1 minute. Rotate the baking dish and microwave for another 4-5 minutes. Bigger squashes will require more cooking time. The squash is done when the flesh around the stem gives under pressure from your finger. If it feels firm, continue cooking.

healthy dishRemove from microwave. Plate the squash and drizzle with half a tablespoon of Extra Virgin Olive Oil. Use salt and pepper to taste.
