How to make a good summer salad from an old PA. Dutch recipe. This is easy, tasty and different.

Instructions

Things You'll Need:

  • Ice berg or butter lettuce
  • Fresh baby spinach or young fresh dandelion leaves [harvested from your lawn or meadow
  • Thick sliced bacon
  • Hard boiled eggs
  • vinegar
  • sugar [or maple syrup may be used for a more California taste
  1. Step 1

    Use a medium sized frying pan. Cut up 4 slices of thick bacon into pieces and fry. Save bacon "juice" in pan. Add approximately 2 or 3 tablespoons of apple vinegar. Stir on low to medium heat. Add 2 or 3 tablespoons of sugar [PA Dutch style] or 2 or 3 tablespoons of maple syrup [CA style] to taste. Continue heating and stirring for another few minutes.

  2. Step 2

    Have washed and "torn" [cut up] lettuce, spinach or dandelion greens in a medium sized bowl. Pour warm bacon mixture on top. Mix thoroughly. Add 2 sliced hard boiled eggs on top. Sliced tomatoes may be added also.

  3. Step 3

    This will make an usual and delightful accompaniment to a lighter summer supper. For a person on a limited budget, harvesting young dandelion greens, before the plant flowers, is a money saving device and has been used since The Great Depression.
