Step 1
Step One: Gather Ingredients
You will need:
3 cups cut chicken (or more - whatever you like)
3 cups sour cream
Salsa
green Chile peppers (the small cans will be fine)
Canned sweet corn
Sliced onion
minced garlic
chile powder
salt & pepper
olive oil
Pkg of 12 corn tortillas
CHEESE! - a mexican blend or monterey jack, cheddar -
Step 2
Step Two: Making Your Casserole
Pre-heat oven at 450 degrees
In a saucepan, combine chicken, 1 cup sour cream, corn, green chile, onion, chili powder, garlic, salt & pepper. Stir & cook over low heat until thoroughly heated. Set aside.
In a baking pan, spread salsa on bottom of pan until covered.
In a skillet, heat olive oil & fry corn tortillas just a few seconds. (you don't want to over cook - you still want the tortillas soft) After you have cooked your tortillas, fill tortillas with your chicken mixture and roll and place in baking pan.
Once all of the enchiladas are in the baking pan, spread the remaining sour cream on top, some salsa, and top it off with your cheese. Bake for about 10-15 minutes. -

Let the casserole cool for about 10 minutes before serving. You can garnish with tortilla chips, guacamole, salsa, or cilantro.
I love having a nice cool margarita with this meal. Depending on how spicy you like your food, I also add some hot sauce to the top of the casserole. You can serve with refried beans. YUMMY!
