Things You'll Need:
- 2 unbaked pie shells
- 3 large Vidalia onions, thinly sliced
- butter
- olive oil
- 1/2 lb grated Italian cheese blend (Mozzarella, Provolone, Asiago, Parmesan, Romano)
- 1/2 lb. grated cheddar
- 2 T. flour
- 5 eggs
- 1-1/2 C milk
- 1/8 tsp. pepper
- 1/2 tsp. salt
- 1/8 tsp. nutmeg

Step 1
Preheat oven to 400°. Bake pie shells for 5 min. While pie shells bake, sauté onions in butter and olive oil until tender. Pour onions into baked pie shells.

Toss cheeses and flour in a separate bowl, then cover over onions. Beat together eggs, milk, salt, pepper and nutmeg. Pour over cheese and onions.

Place pies on baking sheet, bake for 20 minutes at 400°. Reduce heat to 300° and continue baking for another 15-20 minutes or until knife inserted comes out clean. Check your pies the last ten minutes of baking to make sure they don't get too brown. Serve hot.
* Also, try this: to the cheese mixture add meats such as chicken or ham, or seafood such as lobster, shrimp or crab meat.
* For a vegetarian approach, you can add sun dried tomatoes, basil, garlic and pine nuts to the cheese mixture.
