How to Make a Scrumptious Cheese and Onion Pie

A cheese and onion pie is great as an appetizer or serve it with a salad as your entree!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 unbaked pie shells
  • 3 large Vidalia onions, thinly sliced
  • butter
  • olive oil
  • 1/2 lb grated Italian cheese blend (Mozzarella, Provolone, Asiago, Parmesan, Romano)
  • 1/2 lb. grated cheddar
  • 2 T. flour
  • 5 eggs
  • 1-1/2 C milk
  • 1/8 tsp. pepper
  • 1/2 tsp. salt
  • 1/8 tsp. nutmeg
  1. Step 1

    Preheat oven to 400°. Bake pie shells for 5 min. While pie shells bake, sauté onions in butter and olive oil until tender. Pour onions into baked pie shells.

  2. Step 2

    Toss cheeses and flour in a separate bowl, then cover over onions. Beat together eggs, milk, salt, pepper and nutmeg. Pour over cheese and onions.

  3. Step 3

    Place pies on baking sheet, bake for 20 minutes at 400°. Reduce heat to 300° and continue baking for another 15-20 minutes or until knife inserted comes out clean. Check your pies the last ten minutes of baking to make sure they don't get too brown. Serve hot.

    * Also, try this: to the cheese mixture add meats such as chicken or ham, or seafood such as lobster, shrimp or crab meat.
    * For a vegetarian approach, you can add sun dried tomatoes, basil, garlic and pine nuts to the cheese mixture.

Tips & Warnings
  • You can cover with tin foil to prevent the crust from burning.
