How to Prevent Olive Oil From Going Bad

Olive oil, and extra virgin olive oil in particular, has gained popularity in the United States over the past few years, in part because of American chefs who train in Mediterranean countries, such as Italy and Spain, and bring their new-found knowledge back home. Olive oil can turn rancid or bitter, so it is important to take steps to keep it fresh.

Storage and Maintenance

1. Store olive oil in a dark location. Too much light might cause it to turn rancid.

2. Seal your olive oil after every use. Exposure to air could cause the olive oil to lose some of its components and/or turn bitter.

3. Do not expose your olive oil to heat by storing it next to the stove or on the windowsill. Keep it in a cool place.

4. Extra virgin olive oil should be consumed in 8 to 12 months. Do not buy large gallon containers, if you will not use it all within that period of time.

5. Buy authentic Tuscan olive oil. It is usually high in polyphenols, which keep the oil from going rancid.
