Shrimp scampi may resemble and taste like a gourmet creation, but the preparation of this Italian dish is simple. Shrimp scampi combines traditional northern Italian and southern Italian ingredients to make a white sauce that tops this flavorful seafood entree.   • 1 lb. peeled and deveined shrimp
  • Colander
  • Water
  • Paper towels
  • Sauce pot
  • Salt
  • Capellini pasta
  • 1/4 cup olive oil
  • Skillet
  • 2 tbsp. minced garlic
  • Bowl
  • 1/2 cup chardonnay or pinot grigio
  • 1 tbsp. lemon juice
  • 1/2 tsp. dried pepper flakes
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 3 tbsp. unsalted butter
  • 2 tsp. parsley

Instructions

      Place 1 lb. of peeled and deveined shrimp in a colander. Rinse the shrimp under cold water to remove dirt and bacteria. Drain the water and pour the shrimp onto a clean paper towel. Pat the shrimp dry.

      Bring 6 qt. of water to a boil in a sauce pot. Add a pinch of salt. Boil 1 lb. of capellini pasta for three to four minutes until al dente, which means it is tender, but firm.

      Heat 1/4 cup olive oil in a skillet on medium heat. Add the shrimp and saute it for about one minute. Flip the shrimp. Add 2 tbsp. of minced garlic and saute it with the shrimp for one minute. Pour the shrimp and garlic into a bowl.

      Pour 1/2 cup of dry white wine such as Chardonnay or pinot grigio and 1 tbsp. of lemon juice in the skillet. Add 1/2 tsp. of dried pepper flakes, 1 tsp. of salt and 1/2 tsp. of pepper. Reduce the wine in the spices for one minute.

      Add and melt 3 tbsp. of unsalted butter and 2 tsp. of finely chopped parsley, stirring the ingredients in the skillet while the butter melts. Pour the shrimp and garlic back into the skillet. Saute and toss all ingredients for one to two minutes until the shrimp turns pink.

      Pour the capellini pasta into a strainer and drain the water. Use tongs to place the pasta into the skillet. Toss the pasta with the shrimp and sauce. Remove the shrimp scampi from the skillet and serve.
