Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 5 slices bacon
  • 2 teaspoons chopped parsley flakes
  • 12-ounce dried corkscrew, bow tie, shell, or penne pasta
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup low-sodium chicken broth
  • 1/5 teaspoon dried hot pepper flakes
  • 4 cups fresh broccoli florets
  • 2-1/2 tablespoons grated Parmesan cheese

Wash and clean the broccoli florets. Boil hot water and add a pinch of salt in a pot, put in the broccoli when the water is bubbling, 1 minute. Scoop blanched broccoli florets and drain with a strainer. Rinse under cold water to keep its color, 15 seconds. Set aside.

  2. Step 2

Cut bacon crosswise into 1/4 inch strips. Sear over high heat in skillet until done; crisp and lightly brown. Drain grease and transfer to bowl or plate, keep warm.

Cook pasta [of your choice, (see the "Things You'll Need" list for recommending variety)] in boiling water, according to package instructions with a pinch of salt, to prevent sticking.

Add chopped cilantro flakes. Cook until done. Drain and set aside.

  4. Step 4

While pasta is cooking, in a skillet, saute onion and garlic with cooking oil over medium heat, 3 minutes. Stir in the red pepper flakes and chicken broth. Add pasta, stirring. Cook ingredients for 1 minute.
