This easy to make cheese pie has been around in my family for ages. My Cousin taught me how to make it and I have past it around to family and friends. It is both easy and very delicious. There are different variations, but this is my favorite one. It will be a hit every time. I use a pineapple topping but any fruit topping will do.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 1/2 8oz pkgs of cream cheese (at room temp)
  • 2 eggs
  • 1/2 cup sugar
  • 1 tsp of vanilla
  • 8oz cup of sour cream
  • 1 extra serving size graham cracker crust
  • Pineapple Topping
  • 1 small can of crushed pineapple
  • 1 tsp of corn starch
  • 1 tbln of lemon juice
  1. Step 1

In a large bowl, mix until smooth first four ingredients.

  2. Step 2

Carefully, fold in sour cream. Incorporate well into cheesecake.

  3. Step 3

Pour mixture into graham cracker crust. Allow at least 1/2 inch from the edge for expansion.

  4. Step 4

Place on center rack and bake at 350 for 30 to 35 minutes. Let cool about one hour and top with your favorite fruit topping or cool whip.

  5. Step 5

In a heavy bottom sauce pan simmer until clear and thick pineapple, lemon juice, cornstarch. Spread over cooled cheesecake and enjoy.

Tips & Warnings
  • make sure to preheat oven
  • do not over bake
  • can also be baked in regular pie crust
