Things You'll Need:
- 1 1/2 8oz pkgs of cream cheese (at room temp)
- 2 eggs
- 1/2 cup sugar
- 1 tsp of vanilla
- 8oz cup of sour cream
- 1 extra serving size graham cracker crust
- Pineapple Topping
- 1 small can of crushed pineapple
- 1 tsp of corn starch
- 1 tbln of lemon juice

Step 1
In a large bowl, mix until smooth first four ingredients.

Carefully, fold in sour cream. Incorporate well into cheesecake.

Step 3
Pour mixture into graham cracker crust. Allow at least 1/2 inch from the edge for expansion.

Step 4
Place on center rack and bake at 350 for 30 to 35 minutes. Let cool about one hour and top with your favorite fruit topping or cool whip.

Step 5
In a heavy bottom sauce pan simmer until clear and thick pineapple, lemon juice, cornstarch. Spread over cooled cheesecake and enjoy.
