Step 1
If you want your sauce to have even more flavor, I like to use meat. You can use ground beef, turkey, sausage, or whatever you prefer. First brown the meat in some olive oil in the sauce pot. Once the meat is browned, drain the excess fat and place back in the pot. Throw in some chopped onions and quickly sauté together until the onions are tender. Throw in some fresh chopped garlic and cook together for another minute or so. The amount of each item depends on how much sauce you want to make. For 2 cans of tomatoes I use about a half a large onion and 4 cloves of garlic. You can add or subtract to your tasting.

Now it's time to add your tomatoes. Play heat on med. low. Use canned crushed tomatoes and add to the pot. Also rinse out each can with just enough water to get the excess sauce out of the can and add the water to the pot. Season with salt, pepper, parsley, oregano, garlic powder, basil, crushed red pepper and an other spice you enjoy in your sauce. Taste for seasoning and allow the sauce to simmer stirring occasionally and checking for seasoning and adding as desired.

After about 30 minutes or so, check once more for seasoning. To reduce the acidity in the sauce add about a teaspoon full of baking soda to the pot. You will see it bubbling on top, stir into the sauce completely. This will change the flavor a lot and reduce the bitterness of the tomatoes.

Pour on your favorite pasta and enjoy.
