How to Make Wonderful Bran Waffles

Here is a twist on the traditional waffle recipe and a recipe for pancakes if you prefer. It is for bran waffles and /or pancakes. The addition of bran cereal to the recipe makes it an excellent choice for lowering cholesterol, minimizing the risk of diabetes, reducing the risk of certain cancers (breast, prostate and colon) aiding in digestion and staving off hunger. The addition of the bran flakes creates a wonderful nutty flavor so your family will enjoy a more nutritious dish not even realizing they are eating healthier. This is also a wonderful recipe to add to your diet if your aim is lose weight because of the high fiber and feeling of fullness after eating them.

Instructions

Things You'll Need:

  • waffle baker
  • hand mixer
  • 2 egg whites
  • 1 cup all purpose flour
  • 1/4 cup sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. sea salt
  • 1 cup buttermilk or sour milk
  • 2 beaten eggs yolks
  • 1 cup whole bran cereal
  • 6 tbsps. melted butter or oleo
  1. Step 1

    Let egg whites stand at room temperature for 30 minutes.

  2. Step 2

    Blend together flour, sugar, baking powder, soda and salt in a large mixing bowl.

    In another large mixing bowl beat egg whites until soft peaks are formed. See illustration.

  4. Step 4

    Wholesome Bran

    Add buttermilk and beaten egg yolks into the flour mixture, stirring until well mixed. Fold in bran cereal, butter, and beaten egg whites.

  5. Step 5

    Using preheated waffle oven, bake per manufacturer's instructions.

  6. Step 6

    Serve with favorite toppings, such as syrup, fruit, apple sauce, etc. and enjoy.

Tips & Warnings
  • To turn this recipe into a pancake mix add extra milk. bake on lightly greased griddle, using 1/4 cup measurements for each pancake. Yields 12 pancakes.
  • To make sour milk from whole milk add 1 tbsp. lemon juice or vinegar to 1 tbsp. minus 1 cup of milk. Stir and let stand 5 minutes.
